A big broad chef knife measuring 13 3/4” overall length with a 8 7/8” cutting edge.
Spine thickness is .120 at its thickest point. As a chef knife should, it has a nice taper towards the tip, and a very lean edge geometry.
The broad profile gives plenty of clearance so you won’t be hitting your knuckles on the cutting board
Steak/Utility
A sleek steak/utility knife measuring 9 3/8” overall with a 5 1/16” cutting edge.
Spine thickness is .120 at its thickest point.
It also has a nice and lean edge geometry, making it suitable for many tasks.
The matching handle material is bocote wood, with 1/8” mosaic pins.
The knife block is matching bocote wood, all from the same board.
The steel used for these is salved from an old saw blade. Likely 15N20 high carbon steel.
I have personally used a chef knife in my own kitchen with this same steel and the edge retention is good.
Keep in mind that being high carbon steel, these need to be cared for much differently than a mass produced stainless steel. This set will rust if you do not wipe it dry after use. NO DISHWASHERS. Hand wash only.
It will develop a patina over time. Do not be surprised if after you cut up some potatoes or lemons and the blade starts to darken or discolor. This is normal, and is the beginning of the patina developing.
Anything acidic will contribute to this. Marinades, seasonings, fruits, vegetables, etc etc…
The patina will only add to its beauty and uniqueness over time.
